Quick and easy to make as well as easy to add to.

  • potatoes
  • salt
  • a bit of frying oil

that’s really it!
Grate the potatoes, not too fine, and heat a bit of oil in a frying pan, initially quite hot. Add the grated potatoes and a bit of salt and make into a flat pancake using a wooden spatula (or something similar if you don’t have one) pressing down on the grated potatoes. If you’re doing your job well the potato will stick together and you can turn it over. Turn down the heat and let it cook a bit longer. Cover the frying pan with a plate and turn over so the rösti slides out. All done! It’s a good idea to make this into a simple meal by serving the rösti with a couple of fried eggs.

For variety you can fry some bacon strips or sliced onion (or both!) first and then add the shredded potato. You can also add a bit of grated cheese but not too much. It will be too strong otherwise. If you add cheese, be careful because it will burn easily.
