These are waffles that will keep. They are not the kind of waffles you would eat warm with filling but rather the same way you would eat a biscuit or a cupcake.

  • 750gr flour (500g self raising and 250g plain flour)
  • 400gr sugar
  • 300 gr butter or margarine
  • 15gr vanilla sugar*
  • 6 eggs

* if you can’t find this ready made in the shop you can leave this out or you can make this yourself by inserting vanilla pods in a container of sugar and leaving this to infuse for a couple of months, mixing it through every now and again.


Pour the flour into a large bowl and mix in the vanilla sugar and sugar. Melt the butter slowly and don’t allow to get hot. Mix the butter and egg yolks under the flour sugar mixture. Whisk the egg whites until stiff peaks form and gently fold under the mixture. Don’t use a wooden spoon; it will break!

Leave to rest for 15 minutes at least. I put mine in the fridge.

Roll into small balls, approximately 5cm diameter and start baking as per instructions that come with your waffle maker. (Did I mention you need a waffle maker?)

Then, when cold, put them in a biscuit tin and enjoy!
